Breakfast Casserole

In our house breakfast is a big deal. Often times when my children were little breakfast was made to order sorta like Cracker Barrel. I often gave choices; eggs and toast, sausage and pancakes, waffles….but now that my kids are getting older I find breakfast is becoming later. We’re now a “Brunch Bunch.” And it seem totally okay with them, and me. I get quiet mornings and I can make two meals into one with brunch. It’s fantastic!!
Often times these brunch meals are a little more filling. My husband and the kids love hearty Breakfast Bowls and breakfast casseroles like this one!

Breakfast Casserole

1 can 8 count biscuits -I use Pillsbury Grands

1 pound sausage (we like Swaggertys Hot Sausage)

2 Tbsp. butter

1/2 cup flour

3 cups milk

4 eggs

1 cup shredded cheese

Salt and pepper to taste

1. Spray large Cast Iron Skillet or Dutch Oven (or any 9x13 pan will work) with cooking spray and preheat oven to 350 degrees.
2. Cut biscuits in quarters and arrange in pan.
3. In another iron skillet fry sausage until it’s cooked thoroughly. Spoon half the sausage over the biscuits.
4. Add butter and flour to remaining sausage and stir over medium heat. Stir and slowly add milk. Cook until gravy becomes thick.
5. Scramble eggs in a mixing bowl and pour over casserole.
6. Spread cheese over casserole.
7. Pour half to two-thirds of prepared gravy over casserole. Reserve remaining gravy for serving with baked casserole.
7. Bake at 350 degrees for 40-45 minutes.

Serve hot, but this recipe also is great for making ahead and refrigerating overnight. Bake it in the morning and Wala breakfast is ready!!

This casserole is perfect for serving to a crowd or overnight guests! Birthday brunches, Easter Brunch, you name it!!
