Vanilla Thyme Peach Bellini’s

What better way to use up those last few summer peaches and fresh thyme from the garden than in this fresh drink.

Pitcher cocktails are my favorite. I loving making a big batch of something that everyone can share. And these Bellinis are just that! Simple, sweet and perfect for an easy Sunday morning!

I have more pitcher than I can count, I love shopping the thrift stores for old dishes and finding pitches in different shapes and sizes. And I’ve also snagged a few pitchers with colored glass which are my favorite!

Vanilla Thyme Peach Bellinis

Ingredients

1/2 cup peach schnapps

1 cup champagne

1/4 cup vanilla bean simple syrup

1 cup frozen peaches

Ice

Mix all ingredients in a blender to purée. Pour in glasses and garnish with fresh thyme and a French peach slice.

Vanilla Bean Simple Syrup

1 cup water

1 cup sugar

1 vanilla bean sliced longways

Put all ingredients ina small saucepan and bring to a boil. When it reaches a boil remove from heat and cool. Store extra syrup in a mason jar in the refrigerator.

You can scrape a knife along the inside of the vanilla bean to remove all the flesh goodness adding it to the simple syrup. Then toss the bean into a bowl of sugar to create a delicious vanilla infused sugar.

Don’t let any of that wonderfully fragrant vanilla go to waste.
