Cookie Recipes from the old Church Cookbook

As I was recently cleaning out my kitchen cabinets I found my favorite old church cookbook. The one that my mom made my sister and I both copies of years ago. The book I learned to bake from. The one that looks like it was hand typed with a typewriter (insert comment from my kids here saying “mom, what’s a typewriter?”)

This tattered book has all those tried and true recipes. Ones with notes, stars and stains covering most pages! This book contain my all time favorite cookie recipe, the Chocolate No Bake Cookies. Y’all, if I could only eat one thing for the rest of my life- it would be these cookies!

These recipes are simple, they have short ingredient lists and are perfect for beginners. And two of them don’t even require turning on the oven, which makes them ideal for the warmer days coming up!

Chocolate No Bake Cookies

4 Tbsp. butter

2 cups sugar

1/2 cup milk

4 Tbsp. cocoa

2/3 cup peanut butter

1 tsp. vanilla

3 cups quick oats

1. Combine butter, sugar, milk, and cocoa in a large pan over medium heat on your stove. Stir continuously until mixture begins to boil then immediately set a timer to 45 seconds, and continue to boil and stir.

2. After 45 seconds, remove from heat. And stir in peanut butter, vanilla and oats.

3. Spoon cookies onto parchment paper and allow to cool.

Chocolate Chip Peanut Butter Bars

1/4 cup butter, melted

1/4 cup peanut butter

3/4 cup sugar

1 egg

1 tsp. vanilla

1/2 cup flour

1/2 tsp. baking powder

1/4 tsp. salt

1 cup chocolate chips

1. Grease an 8x8 square pan and set aside. Preheat oven to 350 degrees.
2. Cream together butter, peanut butter, and sugar. Mix in egg and vanilla.
3. Stir in flour, baking powder and salt.
4. Add chocolate chips and pour batter into pan.
5. Bake for 25- 30 minutes.
6. Allow bars to completely cool before cutting and removing from pan.

Oat n’ Honey Bars

3 cups oats

3/4 cup peanut butter

3/4 cup honey

Mix all three ingredients together well and them press into a greased 8x8 pan.
Refrigerate about 30 minutes before cutting.
Store bars in refrigerator.
