One of my favorite things about summer is fresh produce and fresh herbs. I grow basil, parsley, rosemary and mint. Everything else I like to purchase at roadside stands and the farmers markets.
Do frequent the grocery stores too, but it’s way quicker and a lot more fun to shop local!! _______________________________________
8 slices of fresh italian bread
3 cloves garlic
3 Tbsp. Extra Virgin Olive Oil
2 Roma tomatoes
2 Tbsp. tomato paste
4 basil leaves
¼-½ cup grated parmesan cheese
Salt to taste •Preheat oven to 400 degrees. Place slices of bread on a baking sheet. •Finely chop the garlic and add it to a small bowl. Stir in olive oil. Using a small brush, brush garlic oil onto sliced bread and bake 5 -6 minutes until crisp. •While bread is baking, dice tomatoes and add them to the remaining garlic oil mixture. Stir in tomato paste, chopped basil, salt, and cheese. •Spread mixture evenly on each slice of toast. And top with additional cheese. •Return toast to oven for an additional 7 minutes. •Garnish with additional basil and a drizzle of olive oil. Serve imediately.
