Pineapple Cheese Salad
I don’t always think of salads as being common side dishes to holiday dinners. But, this year surprise your guests with this sweet salad and see them delight in it. My mom has been making this salad as a Thanksgiving side dish for many years. It’s one that we don’t have often but look forward to once a year.
1 can pineapple chunks
8 oz. cheddar cheese, cubed
1/2 cup mini marshmallows
1/2 cup walnuts
1 cup brown sugar
Drain pineapple, reserving liquid to a small saucepan.
Toss pineapple, cheese cubes, marshmallows, and nuts in a serving bowl and set aside.
In a small saucepan whisk pineapple juice, brown sugar and egg together. Cook over medium heat, string constantly. Cook about 7-10 minutes until mixture is thickened and has reduced. .
Remove from heat and cool sauce in the refrigerator. Once cool, pour over salad.
