Grilled Corn

We have a major debate in our home - grilled corn or boiled corn! My husband liked boiled while I love the grilled corn all lathered up with Duke’ Mayo and a sprinkle of hot salt! How do you like your corn?

It all starts with good corn.

I prefer the peaches and cream corn or the yellow and white corn mix and I always buy fresh corn in the husk from the grocery store or farm stand. You can purchase it already cleaned but it’s usually more expensive and I like the freshness from getting it still in the husk.

Sometimes I will even grill it in the husk. And then the silks just fall right off once it’s cooked making it so easy to prepare and clean! To do this, remove the outer husks and then grill rolling around to allow the heat to hit all the sides. Cook about 15 minutes.

To grill the corn on a griddle

Preheat your griddle to medium heat and fry a few slices of bacon to provide a little grease. Remove the bacon and reserve for later leaving the grease to cook the corn.
Add the cleaned corn to the griddle and cook about 7 minutes then roll the corn over and grill another 7 minutes.
When it’s about finished brush corn with a slather of Dukes Mayo.
Remove from griddle and serve with butter, additional Mayo, chili powder, and my favorite Hot Steve a spicy salt blend.

Street Corn Salad

Cut grilled corn from the cob and add to a large bowl.
Add diced red pepper, red onion, chopped jalapeños, diced zucchini, and 1 chopped avocado. Stir to mix.
I use approximately a 1/2 cup of each mix in, I feel like it’s salad and you can’t really mess it up! Add whatever ingredients you have on hand or whatever you know your family will like!

For the dressing, mix 1/2 cup vegetable oil with 1/3 cup rice wine vinegar. Add 1/4 cup sugar and salt and pepper to taste. I mix my dressing in a mason jar with a lid. Just screw the lid on and shake well. Pour over salad and garnish with fresh cilantro!

This salad is great to take to all those summer picnics and get togethers coming up. Pack it up for summer outings, backyard barbecues, and picnics. It’s just as good cold as it is room temperature!
