No Bake Cherry Whip

This pie is the ultimate summer dessert! It’s bright cherry red topping and no bake filling makes it perfect for Memorial Day or even the 4th of July!


You can totally take a short cut and make it easy on yourself by using a pre-made graham cracker crust from the grocery store. Or whip up a homemade one (I’ve added a recipe for the crust at the bottom!)

A few things about “refrigerator pies,”

These types of pies can be made a few days ahead. The don’t water down or get runny waiting a few days in the refrigerator before being served. Keep them covered and they will be just fine!

These no bake pies also freeze well. So make a few at a time and store them in the freezer for up to three months. Cover well with plastic wrap and a layer of foil to protect them before freezing! Then to thaw them out, just move the pie from freezer to refrigerator and allow it to thaw overnight.

Cherry Whip


8 oz. softened cream cheese
1 tsp. almond extract
1/2 cup powdered sugar
8 oz. Cool Whip
1 prepared graham cracker crust
1 can cherry pie filling


With an electric mixer, mix cream cheese, almond extract, and sugar together about two minutes.
Gently fold in the Cool Whip, and once incorporated spread the mixture into the pie crust.
Top with cherry pie filling and refrigerate 2 hours before serving.

This pie can also be made in advance and stored in the freezer for up to one month.
To thaw: transfer pie to refrigerator overnight allowing it to slowly come out of the frozen state. Keep refrigerated until time to serve.

Graham Cracker Pie Crust

Ingredients

2 cups graham cracker crumbs

1/4 cup butter, melted

2 Tbsp. brown sugar

Prepare

Be sure you have crushed your graham crackers to a fine powder. I like to do this in my Ninja Food Processor.

Pour graham cracker crumbs into pie pan, add brown sugar and Melted butter and stir together.

Using the bottom of a flat glass, press mixture into the sides and bottom of the pie pan to create a crust.

If you find the mixture isn’t staying together stir in another 1-2 teaspoons of melted butter.

Freeze crust until you are ready to add pie filling.
